Southwest Pasta Salad

Prep Time: 20 minutes
Chill Time: 1 hour
Yield: 6 servings


DRESSING:
1/2 cup Mazola® Corn Oil
1/3 cup lime juice
1/3 cup chopped cilantro
2 tablespoons seeded and chopped pickled jalapeƱo peppers
2 cloves garlic, minced
3/4 teaspoon Spice Islands® Ground Cumin Seed
3/4 teaspoon salt
SALAD:
6 ounces small pasta, cooked, rinsed with cold water and drained
1 can (16 ounces) black beans, rinsed and drained
3/4 cup diced red onion
3/4 cup diced red pepper
3/4 cup diced yellow pepper
Stir together dressing ingredients in a small bowl until blended. Combine pasta, beans, onion and peppers in a separate large bowl. Add dressing; toss to coat. Cover; chill 1 hour.
